Go in the BMDB file and search of models you wanna track down like for eg Northern_captain will show you all the paths for it's mesh and textures files.
Generally the folder where all the mesh and textures for them are stored in:-
data\unit_models\_generals_and_captains
But in all the full conversion mods I have played, they always have different captains. I mean, Third Age doesn't have a medieval guy in full plate as the orc captain (I'm talking BF here)
♔Sherlock♔Bad boy u should told us that u want to change the battle model for the captain and i presume that u already have inserted the BMDB entry and now want to implement that model as a captain for a particular faction.
Ok in the data folder of your mod there is a file called descr_character.txt open it and u will see like and make the changes shown below:-
