Bayonets are awesome, state-of-the-art, top of the line weapons and should be regarded as such! Costing only ranged capabilities, fixing bayonets allows the user of the bayonet to transform his/her musket into a thoroughly awesome spear!
Sorry, can't help, haven't played ETW in awhile. I think that bayonets give infantry a bonus when attacking cavlary. Thats all I can think of.

If you want to look at the stat changes a technology brings, you have to check the stats in battle (right click unit card).
The stats being displayed when doing that while on campaign map never change.

Since the Bayonet is the melee weapon it wont change there stats. Trying to fight melee without it makes them less effective, however I think when engaged units automatically switch to melee, it seems though it helps to switch before you are engaged (especially against cavalry), and you only have to choose to activate this because 1: you cant shoot your gun with the bayonett fixed and 2: it tells the computer to make your troops charge and fight melee instead of forming line and shooting (this is why non bayonet units also have the melee button, so they will stop fireing and draw swords). Activating will add you no bonus to the stats already there because those are the stats when the melee weapon is in use.
Now, just to be clear there is a bonus for researching bayonet techs. Look at the melee stats of a unit at the beginning of a campaign before you research plub bayonets and then look at it after, it should have gone up a point or two. So there is a bonus to the tech, but its not an on the feild, applied when engaged in battle bonus.
Even without bayonets line inf can easily pwn any light cav/regiment of horse in prolonged melee. I only use plugs while against other infantry and in desperate situations.

Try it in a battle. First use gun-butt clubs and then use plug bayonets. I think you'll find that bayonets, being sharp and pointy kill better than a big blunt gun butt, even if the stats don't seem to change.
Think about it: What would you prefer- Stab Stab *arghh* or Whump Whump *OW! stoppit!*
