Does anyone know whether you can make it so that the wall upgrades don't give you huge stone walls and citadels - mainly because the AI can't handle them. I still want the effect of city and castle upgrades on the campaign map though.

If you remove it from campaign then u can't build them and hence their effects will be removed as well.

Instead download Lusted's Battle and Campaign AI which are very hard so that might give you the challenge u are seeking.

Yes, it's quite simple actually. What you need to do is go to export_descr_buildings.txt, and find the core_building chain. Then take a look at keywords such as wall_level and tower_level. I believe that if you keep the wall_level sufficiently low the battle-map settlement will load up as a simpler kind of castle.

the tranquility of servitude greater than
the animating contest for freedom, go
home from us in peace. We seek not
your counsel, nor your arms. Crouch
down and lick the hand that feeds you,
and may posterity forget that ye were
    our countrymen."
