Whenever I capture a city
Playing as Rohan capturing a dunland city, no matter what I do, Enslave them, Massacre them (My favorite
) or simply capture the city, It will ALWAYS revolt... Even if I have a full unit roster with a general.... Can anyone offer hints?

Actually don't destroy their alignment buildings immediately. Build your own alignment buildings in order to start converting some of the locals to it, and bring agents and family members to strengthen the conversion, and then tear down their alignment buildings only when you have converted around half of the locals, otherwise you'll have something like 100 unrest.

See the thing is no matter what I do they have 100 Hate for me... D:. But I'll try to destroy most of their buildings.

Oh okay, by the way, based on how hard it is to keep it from rioting later when I capture a Dunland city, is it best to massacre, enslave, or to simply conquer the city,

Named characters and agents have conversion 'powers'. Just move a combo of those into a region enough to have a significant effect; they don't need to be able to convert the region on their own, but when you take the settlement and build your own alignment building, the combined effects should be enough to overcome the effect of the existing enemy alignment building, so that people slowly get more loyal to you.

A good trick is also to have a spy and an assassin with your major conquering force.
They usually have a bit of conversion power, and getting a spy inside the city is always good.
Then use the assassin to burn down their religious building the same turn you attack.
Burning buildings is way easier than assassinating generals.
That way, you get rid of the conversion bonus to their religion, without getting the population pissed at you because you burned down their temple.
Basically, the followers of the religions that doesn't have their temple, is upset about it. So once your religion starts getting followers, they will start getting pissed about you having the wrong temple. So it's all about finding the right point where you switch the temple.
Also, I think you get a small disadvantage if the citys religion differs from your factions main religion, and another disadvantage if your guvernor has a different religion from the citys religion.
Another little trick is to capture a city with an army that doesn't have a general, and having no generals in the province. That way you can exterminate or enslave without anyone getting the orc-like trait (which is -3 influence I think).
Also, enslave works like this. It spreads out the "slaves" (half the enslaved citys popultion) equally over all your other cities that have a guvernor.
So by moving generals out of your bigger cities that don't need any more population, and just have a general in the smaller settlements that needs to grow, you can channel all the slaves there.
It is enough to just move the general out of the city, how far away he is, is of no consequence, so you move them out right before you attack, then move them back in again.
Also, to keep cities calm, garrisoning the city make the troops "police" the population. The more troops you have, the more effective it is, but the more population there, the less effective it is.
Quality of troops is inconsequential, it's all about numbers, so a cheap large militia unit is the best thing.
You can also "decrease" the population in the city by recruiting, soldiers are deducted from the citys population, so if you queue up large units, you can reduce the population with up to 1000 people or more (of course depending on what unit sizes you play with). Something that can make a big difference. And you can remove them from the queue to get your money and population back whenever you want.
Nasty tricks also include capturing a city, exterminating the population, moving your units out of the city and hope that your enemy retakes it before it has time to rebel (and create more units). Then you attack it again, exterminating again. A double exterminate should depopulate a city very effectively.
