    how does EB multiplayer work, seeing as it has its own shortcut there has to be a way

    The first thing to realize is that you'll need an unmodified EB 1.2 installation - no submods. The best instructions are probably on this site: http://ebonline.tk/. See the "Getting Started" tab. It's not the only way to play EB multiplayer - but its the best so far for finding opponents.

    I'm going to have to agree with and expand on Fred's last point, the one regarding opponents. The more opponents you face, the more diverse/various your battle tactics will have to be/adapt to in order for you to play to your utmost effectiveness. You may keep facing a player that plays using compact and solid, heavy infantry armies but this won't get you the skills necessary to defeat wider skirmishing and/or steppe armies that other, very skilled players use.     Is there a bunch of people on MP playing this?

    You could say that...considering the there are at least 22 people signed up for next month's tournament alone. That is, there are way more people playing exhibition matches. 22 is just those able to play in the tourney. And the tourneys are monthly and regularly held. The tourney threads will only be posted at The Guild forum, though (the first and last time I'll post a tourney thread here at TWC was the July 2010 thread; perhaps it's on page 2 or 3 by now).

    Different answer different times of the day. From my experience on North America's west coast, its pretty easy to find an opponent in the morning, spottier in the evening. For Europe, the better time is in the evening. Dunno about their morning - I'm asleep.
