Dismounted Gothic knights are not in the M2TW EDB file that why we can't get them to train them in any building. There one more disabled unit the mounted longbowmen for england.
To enable them you to modify the EDB file.

Now for guy who has no idea about programs and such. Can I modify those EDB or something? Like unlocking factions, if I can, can you instruct me please?
Or it's some more complex situation which can't be modified via simple txt files?

But unlocking factions is the most easiest thing it's not modding actually more of like a simple trick or mere editing.
OK go the medieval 2 installation directory and you'll see a folder called data.
After that open the file descr_strat.txt which is in
data\world\maps\campaign\imperial_campaign folder.
When open it you see something like this

now simply cut paste the factions which are under the unlockable into playable and save changes to the file & make sure u make a backup of the file first.
Now launch the game and Voilayou have unlocked all factions.

Zwei handers cuts DFK's into pieces, also most of other heavy infantry then I try infantry fightis 1 on 1 in costum battles. Also I go with upkeep cost rather than train cost. In this case Zwei handers are cheaper after 3 turns.

I concur with lenney boy here DFK or better DCK both are perfect for nasty fist fights.Why even use Zweihanders? Just use DFK's, they are cheaper ánd better units.

Anyway; Dismounted knights will defeat every other type of heavy infantry the HRE can field, plus they are easy to recruit and maintain (doesn't take a lot of upgrading). I think it's too bad, though. The 2-handed bug should have been fixed in the first patch.

2H bug is fixed in pretty much every mod, I can't believe anyone still plays vanilla.
I'm still waiting for my new Kingdoms disk to arrive, it's been weeks since I ordered it.. Once I get it, SS 6.1 is the first thing I'll download.
