How am I supposed to play them? They lack so much in cavalry and archers?

Also try to fight as many sieges as possible. The dwarves are the best faction for city battles.

in my personal opinion, they're not.
I find it easier to defend with the elves.
just put some archers on the walls -> few enemies left using the ladders -> easy win. Also elven archers can also handle the melee

but this is only my personal opinion!

    i dont agree with you
dwarves are the best in city battles
their units have massive armor and very good defense skill that enables players to win
also there is no problem with snagas if u have at least one unit of cavalry or archers

Depending on what your problems are, there are different solutions.

    Problem (1) No flanking possible.
Just use light infantry to flank

Problem (2) Snagas are annoying and hard to kill
No fair solution to this, auto_win works fine though.

I agree with the above post. Best way to go is auto win with them.

You can win easy enough without cheating. Snagas are not that hard. A few crossbows and they are gone.
The damage they are doing can also be ignored.

    A- axethrowers,
I-infantry(basic or defensive, good to have some Vault Wardens),
    C- crossbowmen (sorry, crossbowdwarves ) ,
OI- offensive infantry, some Axemen (axedwarves ) of Erebor or Dragonslayers, sometimes Guards of Khazad-Dum

Axethrowers have the second strike after the crossbows, they deal much damage to enemy infantry, esp if it has much armour (they have freaking ap attribute!)

when enemy inf close you just retreat with axethrowers and crossbows, positioning them to fire better, and have your infantry hold the enemy, and after that move your axethrowers to strike from the rear or flank

offensive inf could prevent enemy from striking into your rear or advance into the enemy's rear

meanwhile your cavalry (good to have one or two units, but no more) run through the field chasing rooters or archers

after a shower of axes combined with the strike of your offensive infantry.... just carrion will be left

Crossbowmen + Vault Wardens + Iron Guard,in last period but until then you will have great problems!

Are you really kidding me. Your asking how to play them????

Wow, The Dwarves are one of the easiest factions to play. I beat the campaign with them 4 times. And i think this is going to be Closed.

Actually, while the dwarves are a very easy faction to play they can be very frustrating for players who aren`t used to them.

    Here's my suggestion:
    Open: "C:\Program Files\SEGA\Medieval II Total War\mods\Third_Age\data\export_descr_unit.txt"

    Search for "Snaga_Skirmishers"

AND DESTROY* THAT BLOODY ING PIECE OF !!!!!!!!!!!!!!!!

    * I'm not being serious, [sarcasm] it would ruin the quality of the game and take away all the fun[/sarcasm], furthermore you would also have to get rid of several other entries in other files. (I haven't erased the unit, you shouldn't either).
