Do you mean completely replacing the unit or just change the looks?

You'll need to edit the EDU and DMB to edit unit stats and model assignment respectively. As for the UI pictures go to the UI folder, inside look for the subfolder of the faction the unit was assigned to. For the descriptions, go to Text folder and find the export_units.txt, unit descriptions in it are listed under the dictionary names assigned in the EDU.

.cas and dds files are usually located in the models_unit folder but some mods somethings put them elsewhere for some reason. .cas files are in the folder itself while dds files are in the textures folder within it.

Does the unit (model, skins, sprites and UI cards) you want to change your unit to already exist in the game, or are you going to add it yourself?

You're gonna have to get everything I mention in my first except for the EDU entry for that then

You will need to add the model(s) in the models_unit folder, the texture(s) in the models_unit/textures folder and the sprites in the sprites folder. Then, in descr_model_battle.txt you should create a new entry for your unit. Edit the entry so that it uses the model(s), texture(s) and sprites you added.

Then go to export_descr_unit.txt, find the unit you want to change the look of and replace the first value of the "soldier" line with the name of the new entry you added in descr_model_battle. If the weapons of the old and new model do not match (ie one of them has a secondary sword, while the other does not), you will need to change the stat_sec and stat_sec-attr lines accordingly.

Finally, the unit info card (large) and unit card 9small) should be added to ui/unit_info/[faction name]/ and ui/units[faction name]/ respectively, named in the following format: "dictionary_tag" +"_info.tga" (info card) and "#" + "dictionary_tga" + ".tga" (unit card).

I'd also suggest checking the "Adding a new unit" section of this post here.
