I noticed that the French uniforms in the new DLC look very bad. Like most of the troops have white jackets and brown pants. When I watched Sharpe I didnt see any of these bad French uniforms.

Think those are the new guerrilla units everyone can recruit.
Wondering about the same thing. Some have a brown pance now and some wear white.
Perhaps it resembles some less organised soldiers.

They are campaign uniforms.
The brown trousers shows irregulars large trousers used by the troops in the hot climate of spain.
White jackets are soldiers who don't wear their jackets (cause of the climate) and just what is worn under normally.
what is funny is that the british aren't shown in campaign dress on the other hand.

Use of brown trousers is correct. The French did make great use of brown cloth for clothing as they captured - sorry I meant looted or liberated depending on your viewpoint - a lot from the monasteries.
Uniforms are 100% accurate.

The French troops in the Penisular War are mostly second-grade troops I believe, and their clothing and equipment are worse than the respected troops of the Grande Armee.
Indeed, as panzerschrek says, the French uniforms are quite accurate. A unit only looked smart and uniform when it arrived in the Iberian peninsular and once uniforms began wearing out they would have to be replaced, mostly, with whatever was available locally. Brown pants were very common and were worn by all sides, British and French included. In fact, during the winter months when the men would wear a wide variety of greatcoats, in varying shades of brown and grey, often, at a distance, the only way you could tell bodies of French and British soldiers apart was by their headgear. A fact Wellington moaned about when the stovepipe shako and bicorn, for infantry and cavalry, were replaced with items that looked very similar in outline to what the French wore, from afar.
from what i have seen so far i would say CA did a good job.
