What kind of "start" artillery unit would i use, the Sakers or the Demi-Cannon ?

Pretty sure you get 4 demi-cannons per unit (at least that's how I have my unit sizes set up) and 3 per unit of sakers, isn't it? Also, you can't use canister shot with sakers, which is a deal breaker for me.
accourding to totalwar.honga both the Sakers and the Demi-Cannon has 4 guns/unit
Yes, the amount of guns is the same (depends on your unit size settings in graphics options: 1 for small, 2 for medium, 3 for large, 4 for ultra).
Anyway, I for one don't use the early artillery at all until they become moveable; in fact, I scrap the units I start off with.

on the other hand, these fixed cannon do have slightly better stats.

Me: We have the enemy cavalry at optimum range! Fire Cannister!"
Artillery men: "Er... we don`t do cannister."
Me: What?
Artillery men: "It`s not our scene, man."

Well if you want to get rid of infantry try sakers, and if you want to get rid of walls and buildings try Demi's.
I doubt this ... if Sakers don't get cannister shot, I don't this myself I have never build this unit myself, then this makes them weak vs. infantry.
The Demi's stick around in the game for a long time so I'd say they are OK if you don't mind the lack of mobility ... I keep them as they tend to be rather experienced by the time I get my 12#'s. Once I get the 12#'s the Demi's go to backwater theaters or garrisons that need a bit of extra umpf.
Don't use either, just scrap them and wait until you can train 12 lb foot artillery, the money is better than fixed artillery IMO
Is the fixed artillery pieces usefull as a defensive ? Like useing it to defend a minor important buildings?
I put two units of fixed artillery in my early game armies. They're useless on attack, but work just fine on defense. They're made completely obsolete by the early foot pieces, but as long as I research canister right away, I get a good return on the investment.

Yes, sure, I don't disband them or anything, they're useful on defense, sometimes responsible for more kills than any single line infantry (with canister). But I use a couple of TopCat's mods to make artillery much more accurate, and canister more deadly. Vanilla, I probably wouldn't build anymore than I start with.

Well ask yourself this do you ever use the defensive fortifications in a defensive battle, most people will say they do not because it restricts the swing of your guns ... it also takes away all mobility ... but if you use guns with the eartworks then they might as well be the demi-cannon. Now the saker I have never used and I don't know why anyone would ... most armies are given demi-cannons at first and sakers are the first gun to leave when you get your 12#'s I don't know why they are even in the game it would have been better to put in something that actually gets used, even pikeman have more use then sakers.
Demi-cannons seem to be slightly better than Sakers.

My preferred tactics in the early game tend to involve movement, mass, and melee. Artillery just slows down my armies and hinders my maneuvers, so I scrap all sakers and demi-cannons immediately. I haven't spent money on a 12-lber yet either.
I've almost never had much of a problem with AI-controlled artillery for the first 15-20 years or so. I have come to scorn even their 12-lbers so much that I count two units of them as one line infantry or regular cavalry when weighing odds.
Ottoman 18-lbers with canister, however, are worthy of respect. I actually need to think about how my forces advance to them - I can't just tell my cavalry to "advance across open country from half-way across the map, and don't bother me again until the enemy arty is dead and you want another target".
