On top of my head, i remember the Ethiopian Agema axemen, Also the Goidilic units, and the Uber Armoured Iberian ones...
They were removed from various reasons, the most common are: Not enough info on the unit, wrong time-frame (the Agema came later on, near the end of the mod), or like the Uber Iberian ones, too small a unit IRL to represent them in game.
That last one may change in EBII, since theres a limit on how many times you can train a unit.
As for the question which units will remain i really can't help you with, since i'm not a team member.

That is correct. Though the Vasci tanks as well as the Goidelic and Ebherni crazy elites can still be re-enabled. There are some threads about this, especially over at the .org.
Not all of them are gone. The Seleukid tank men just got a different skin, as did the legionaries.Here are some unit's which are no longer in EB 1.2 ( or at least i don't remember seeing them)
The raccoon men evolved into wolf men (Worgozez), while their swords "devolved" into axes. Also, Worgozez kick ass.
The Germanic elite axemen have been taken out, like their Ethiopian brethren, for belonging to the wrong time period.
Don't know about the last unit, but it looks like a heavier version of the Jewish Spearmen from EB. Incidentally, those will not be in EB II (some team members said so more than once).

The Germanic two-handed axemen (Merjoz) were removed for being ahistorical. AFAIK two-handed axes are a late Viking/Saxon development, so you wouldn't see them in a Principate setting.
The Ethiopian Agema was a Ptolemaic unit, so it would not appear during the Principate either. They were removed because new evidence suggested their role was merely ceremonial.
