I'd go with LCD for gaming. Static images can be burned into plasma screens after some time. While newer plasma technology means that burn-in are unlikely to happen unless you have a static image on the screen for hours at a time, video games UI's (user interfaces- health bars etc) are pretty static.

I would go on the merits of the TV over the panel type. Burn in still exists, but depending on the actual manufacturer of the panel itself, the chance that happens even with a static image being displayed for 30 minutes, is greatly reduced. But the same rules of thumb still exist with plasma.
As far as what is better, there is really almost no performance gap any longer. In terms of PQ, the new LED/LCD has surpassed plasma, up till now. Pinoneer should very likely put out something that bests that, but not by much. And you are going to pay the price of a compact car to own one.
You really just want a TV that is good for gaming. Low lag, and a good gaming mode. But typically, any of the truly phenomenal PQ HDTV options are going to handle that very well.
Dont know what your budget is, but the newer LG LED/LCD are really great.
