Shogun: warrior monks, most versatile unit in the game
MTW: trebuchet,... loved the range this units had back then
RTW: silver shield pikemen
MTW2: longbowmen
ETW: every kind of line infantry
All time favorite for me will have to the Scots Guard. Look awesome and pack a decent punch.

MTW: Either chivalric knights or swiss armoured pikemen. Its been so long since I played it though that there may have been others i've forgotten about.
RTW: Legionary 1st Cohort: Epitomizes the strength of Roman arms, and looks great marching under the eagle.
M2TW: Retinue longbowmen.
ETW: Black watch. I love the models and they are useful in battle as well.
Not played napoleon or shogun yet.

Not so sure about my favorites, but I do remember one unit I loathed like a fat kid loathes a diet. I can't quite remember the name, so someone's gonna have to help me out here. But they were those "nude" units the Gallic tribes had, from EB for RTW. Man, those things were the proverbial thorn in my side, and every Gallic army always had 5 or 6 of them in every stack. The CPU would hide hordes of those dudes in the forests and spring them on my principes when I'd walk by and they'd just chew through my flanks like a rabid dog through prime rib.

In Medieval 2: Greek Fire. Holy crap- used just right? Those guys were game turners.
And in Rome: TW, my favorites, just for the novelty and pure awesome- Urban Cohorts.
NTW: Guard Seamen
I'd have to think for a while to name my actual favourite from every game, but one unit has always had a special place in my heart for it's sheer absurdity and ludicrous, overwhelming power. The Timurid Elephant Artillery (or whatever it's called) from M2TW.
It's amusing, if your machine can handle it, to set up a custom battle with a full stack of fully upgraded elephant artillery. Put them up against anything. Absolutely anything. The combined, fully upgraded late-era power of France, England and the HRE for example. 3 on 1. See what happens.
