Well..first you don't send the siege towers until you've finished firing with siege weapons.
I'm not sure about the range of the cannon towers but once they're there, your best bet is to use ladders. A monster bombard is probably one of the only siege weapons that really outranges those towers and demolishes them pretty quikly. Whenever I see a cannon tower, I prefer to just wait out the siege and starve them out. Waste of time but at least you don't lose an entire army doing it.
If you really must assault the citadel, put high morale shock troops like gothic knights or janissary heavy infantry or even any of those feudal troops with two-handed swords on the ladders. I usually back them up with shielded troops just in case. Also, if you outnumber them, place units on numerous sides and bait them until one side is weak, then attack that one. Once you're in, it's a matter of getting as many troops in as possible then opening the gates. If you don't outnumber them, you could try the same tactic but I usually find it's better to focus on the one spot and go with everything you've got. You shouldn't be assaulting a force that's larger than yours anyway.

Meese is on the right path. Ladders is the way to go my friend. Lots and Lots of ladders.
You'll need them ladders for the next ring of walls as well!!
Also, make use of cannon fodder. Spare a unit that you're willing to get blast out of the heaven and skies. That way, the towers target your own cannons less and you can really blast them towers and walls wide open.
I never assault with equal forces anyway. It's suppose to be theoretically and practically impossible to assault a citadel with cannon towers with equal forces. I always aim to outnumber the enemies by at least 50%.
Usually though, I just starve them out.

I ever relate the time I defeated a full AI stack with 4 units of yeomen and 1 unit of armoured swordsmen in a citadel?
That said, unless I have overwhelming superiourity of forces, or the strategic situation requires a rapid capture at any cost, I just starve them out. If I COULD take the place, but take unsustainable losses (eg, only stack for miles, lots of enemies nearby) I'll fallback and regroup. Castles/Fortresses/Citadels are MENT to bees to take.

Use assasins to sabotage those cannon towers and then siege the citadel so they cant repair them.

Starvation is no doubt the best option. After that, assassins are also very usefull, although you will need quite a few or some very good ones.
In battle, run your ladders to the walls. Try to arrive everywhere at the same time. If you have more troops, the AI will be confused and might try to retreat a level. Simply open the gate and run them down. Then, pick up your ladders from the walls, march through the gate and do it all again.

Even with the stupid AI, you are still going to struggle like hell. Citadels with cannon towers are suppose to give massive advantage to the defenders. Being outnumber 5:1, and you still got a shot. But you're giving yourself less force, so I'm not exactly sure how you can go about doing this.
You might be able to win that but it will be bloody as hell and more than 1 mistake by you and its not possible. With the lower funds you gave yourself wasting it on bombards is probably not a good idea because your enemy gets even more troops and has the towers free. Picking the weakest unit enemy on the walls and sending your strongest with ladders vs it while still trying to sneak in another unit somewhere to distract units and sacrificing some cheap unit first to draw cannon fire is probably best and focus on good placement of some strong archers or some elite units and a way to tactically surround the enemy or it is going to be almost impossible with less forces if the battle is under timer. If its not timed you got alot more chances but including some really boring waiting and positioning.
