Gather all the troops that you can into a single stack leaving only a single unit as garrison in each city.
Hire all the mercenaries that you can, add these to your stack - you should be able to get almost a full stack of troops.
Let the Gallic hordes come to you - find a good ambush position if you can between them and your capital.
Usually they advance towards Macedon first - Let them wear each other out.
Use the cheesy corner of the map deployment when in battle and deploy uphill if possible.
Use you advantage of javelins to best effect - pausing the game just before they charge into you set all your units for war cry and then engage in melee.
Do not be afraid to lose - your aim is only to kill as many of the gallic horde as possible - withdraw your men before you are slaughtered, keep fighting defensively and wear them down - they can not replace their losses you can.
Keep a close eye on your light cavalry as they are willful and usually end up in melee with opponents even if you have them set to skirmish.

I had no problems with Gauls in my Thracian campaign. All I did was leave them alone and they left me alone. Now they and Macedonians bashed eachother nearly to oblivion which means they are both ripe for my pickings!

In my Thrace games one stack goes to me, and I beat it pretty easy, and as long as I back off the other two go towards Macedon, which makes them both easy meat. You just need to get a bit lucky with the Indie Celt AI.
