Can you tell me what period you are referring to? I'm guessing High?

Army composition is not static, it allways depends on the tactic, terrain, opponent faction and his possible setup and chosen tactic.

Assuming that you're talking about the high period, you have the right idea about multiplayer armies. I would add though to not take more than 4 of any single unit. I mean, you can, but generally you wont want to since it will be more expensive. I'll take more than 4 if it's a very cheap unit like pike militia, but you should be careful about taking 5 DCK's or Saracen Militia.

The Turks can be a difficult faction for the high period since they rely mostly on maneuver than directly powerful units. My favorite high Turk army is.

    Faction: Turkey
    Money: 10k
Rule: No art/eles 6 max cav 2 HA

    1 GB
    4 Alan light cav (sword)
    1 Turkish horse archer
    4 Saracen Militia
    4 Ottoman infantry
    2-3 Nafftun

Rest of the money of a few non specific upgrades.

Alan light cav is Turkeys most powerful force in high and you need to use them to gain the advantage. Quick charges and rapid envelopment. Also I took more Ottoman infantry since while they are archers, they are also your best infantry. As long as I'm facing other infantry, I'll charge my Ottoman infantry in ahead of my Saracen militia since they will fair better against other swordsmen. I do the same thing as the Mongols with Mongol infantry.

My favorite army for high period:

    Spain
    10k - ish
6 cav max, 2 horse archer max

    1 General
    3 Chivalric Knights
    2 Mounted Xbows
    2 Bombards or trebs
    4 pavise xbows
    4 dismounted chivalric knights
The rest is spent on peasants or peasant crossbows if I can afford them. I throw in armor upgrades for the mounted xbows and weapon upgrades for the knights if there's no art allowed, or I have more than 10k.

By far my favorite setup, able to deal with just about everything. I almost always go for quality over quantity.
