Are we not supposed to build these? They don't give units (just a 5% happiness bonus) and they cost a ton.

Yep, they should be getting removed at some point in the future.
Yeah, I've only left them in because:
1) We don't need the EDB space (yet)
2) I've never removed a building tree before and I'm not sure how to go about it. Since they're not breaking anything now, I figured I'd just leave them in. I'll make them less visible, though.

Those are fine ideas, but the problem is that making the recruitment of any unit dependent on the presence of another building triggers a CTD when someone uses the building browser. It could be a universal bonus, but then we'd have stables giving bonuses to slingers and ranges giving bonuses to falxmen.
Yeah, I need to do that.

I suggest adding some kind of experience bonus for each unit recruited in a settlement with a stable or practice range.
eg: Light cav get +1 exp bonus. The upgraded version of the stables add exp to med/heavy cav.
Same goes for skirmishers/slingers/archers and so on.
It can also be another bonus like... em... +1 morale, or perhaps +1 weapon?

+1 experience or morale maybe; perhaps it represents a riding school adjunct where retired veterans come to pass on their learnings.
