I am a cavalry guy and cant do without them. (at least, I think in that way) So what do you think an all infantry arm's chance of winning ? (missle troops allowed)

Mostly you would get slaughtered, Using a well balanced army is always better than just using super strong infantry, but obviously if you did silly money games like 100k or something then obviously missile troops are then not as good agaisnt super strong rome infantry or Spartans, If you cornered camped then cav not much use either
Allways use some cavalry to counter the enemy's light missiles and run over retreating men.

Inf only armies only work vs noobs. theyre only used by noobs too. There are clan armies with more than 8 infantry but they are usually used in combination with an ally that uses chariots or other heavy forms of cav. However these include a strong ranged detail and light cavalry, and are used by skilled players, and are thus not killable with fire.
I hope you mean Light cav, because using Cataphracts to chase down archers and grind some extra kills is just perverted.
Yea combined-arms armies will most likely crush all-inf. armies, you would suffer from lack of mobility compared to your opponent who would have cav, and if he has catas, then you're screwed.
I had a Lombardii army in BI, 6 Chosen Axemen (or whatever you call those guys), 6 Golden Band, a Lombardii Archer, and some light cav of some kind. I pretty easily beat my friend's Saxon army with it, but it's hard to say whether it would have been good normally, due to lack of online BI.
