My question is how I can add princesses and merchants back in the game... In other words, in which files do i need to edit? I know that it will be the vanilla models and voices but that will suffice (for the moment)

For the princesses: Open descr_sm_factions (it's in your data folder) and change can_have_princess from no to yes for the factions you want them to have.

Thank you, and I presume than that for the already "living" princesses I need to add a location in the descr_strat?
And at what age are princesses available, 15 or 16?
