I doubt he got the idea directly from that castle.
I did read somewhere that Tolkien himself were at Mt. Saint Michel and did get some inspiration from there when writing about Minas Tirth. Would make a lot of sense, Mt Saint Michel + Byzantine Constantinople = Almost identical description of Minas Tirith. Needless to say it would be cool to visit the place sometime, not for looking like Minas, but rather because it seems to be a really cool place, with a really long history.
P.S Yep, it does look like a church because there's an abbey on the top of the castle. There has been christians there since approx. the 9th century.
I have already went to Mont Saint Michel. This is a beautiful fortified monastery with a magnificent goldenj statue at the top.
The inside is like tipical middle age castle with a lot of stone arches, and the view is wonderful.

by the way, Mt St Michel is about 4 time smaller than Minas Tirith
