You need to balance your economy. If you're bringing in 10k surplus every turn it means you're not using your finance to fund your army. The AI still sees you're making aton of money so it says "Hey, I should probably attack this guy to slow him down."
Also, don't waste your elites at your borders. Use your Urban Militias and light cavalry for that.

Elite units go for important sieges. Every city, except those prone to attack are only garrisoned with what is free. 2 to 3 stacks (at your stage maybe even 4) at the border, but inside the enemy territory.
If you are extremely well off, and so have a lot of enemies, make your best well-rounded half-stacks! No need to use full stacks here.
And most importantly, generals in every army!

Ah...yeah, that seems to be pretty typical. The other tips about army composition have been good.
I'd probably add that, often, you'll want to drop the taxes to low firstly to have an excuse for a small garrison, but also to increase the population (ie. more taxes) and your governor's chivalry (more population, and taxes). I'd probably also focus on the one front, keeping the others mainly defensive and that way you'll again reduce the upkeep seeing as defensive sieges are typically less costly than field battles.
I'd suggest heading eastward as the Turks can be a real pain and, among all the mountains, the west is somewhat easier to defend. The holy land can also pump out a lot of money.
Building-wise, make sure you get those roads up for more trade and importantly, faster travel. Build sparingly while at war, only what you need to build, for an army sitting in a newly-occupied settlement is costly.
But I guess the most important thing is to play your diplomatic cards well. Sometimes, I'll sell settlements that are going to be lost and destroy all the buildings if I have no plans to retake it. Also, if you have money to spare, try and obtain a truce then placate them with tributes. It's cheaper in the long run.
I suppose you can still try and get an alliance/good relatinos with Hungary and still take Sofia.
