Could be the troop's morale that is the issue. Try not leaving them under fire and check how tired they are. When they get winded, try to rest them. Also attack from different directions at once (or just put one unit with a ladder on other sides of the wall as decoy).
how about making an army that isnt made of peasants? they wont run as easy

Could be you don't have enough rams. On a citadel you have to get through the front gate and then roll a ram through to the inside wall, which gives a lot of opportunity to destroy it, and then you're sunk. Make sure you build enough siege equipment for the double assault.

I'd suggest sacrificing one or two of your peasant crossbow units for some more melee infantry, so long as you can move them to the front fairly easily. Sure, you'd have to break off the siege to reform your army, but it should give you more options. Unless you're using the crossbowmen as siege-engine pushing fodder then I don't think you need quite as many for the assault as you have. Other than that, I'd follow everyone else's suggestions - attack from several sides, rest your troops, and make sure you have the equipment for every set of walls. Good Luck!
As was mentioned -- lose the missile units. Assaulting a wall and gates requires infantry -- swords are better than spears, but spears are better than crossbows (duh!, but I had to say it). Even javalines are better than the crossbows.
Your general has little to do as well since he will be toast in a melee with peasants. The general can run down broken units before they can reform, but other than that he is pretty useless.

i am trying to get sowrds but i have to redirect a whole stack that i have to have in reserve for a battle with the turks, plus i am cloae to bankruptnes, scougall9 the only "pesants" i have are crossbow peasents, they can kick the crap out of regulars, one last thing, should i starve them out?
If there aren't any large enemy armies nearby, go for it.
