plate on it's head, chainmail on it's legs and flanks, less or no archers, lower stamina but better charge. Why not?

We don't need a charging mumakill. They are OP as they are.
I seen depction of muma with armor but that was when most painter was trying to depict the other harad (represented in 4th age total war i think) with that imperial splendour in them.
For third age total war it just doesn't click with the looks of the Harad army.
Don't put armor on the Mumaks, just make them REALLY REALLY BIG! TWICE AS BIG! SUPERMUKS WILL CONQUER ALL OF MIDDLE EARTH! HAHAHA
Ps. I usually stop playing my harad campaign as soon as I get mumaks because my strategy just turns into: "hey lets see how many mumaks I can put into one army" -boring
