I'm no modder myself, but I had an idea for a sub-mod of Stainless Steel... this may have been done before but my search tool on the forums is weird and doesn't work well... anyway, the idea is quite simple and relatively harmless to the main Stainless Steel mod:
Instead of on the Single Player Menu, it having options only for two campaigns, Early Era and Late Era, it could have four (Dark Ages, Early Era, High Era - the current late Era, and Late Era), or two (Early Era and Other Eras which would bring up a menu like the one for Late Era now).
The Dark Ages campaign would start around the late eighth century (preferably just before the start of the Viking invasions), with factions like (I'm totally open to suggestions if anyone's interested in this idea) the Umayyad Caliphate, the Abbasid Caliphate, the Byzantine Empire, the Kingdom of the Franks, the Kingdom of Galicia, the Kingdom of Wessex, the Kingdom of Northumbria, the Kingdom of Mercia, the Earldom of Saxony, the Duchy of Burgundy, the Kingdom of Lombardy, the Emirate of Sicily, the Kingdom of Scotland, the Earldom of Norway, the Kingdom of Denmark, the Pope (of course), the Magyars (starting out in Russia somewhere) and people in eastern Europe like the Poles and the Balts.
The Late Era was an afterthought and I haven't much interest in it, it was mainly suggested to balance it out and for people who like guns and cannons.
