Playing as Rome - I tend to build military temples (Mars) at cities from which I intend to recruit military units.
All other cities get ONLY Jupiter or Juno temples. I do not build any other temples.

I found that I will build any temple that doesn't grant population growth bonusi so I can have better population control. It kind of is good to swap your generals around so that they get the temples' good ancilliaries, and by having a more diverse portfolio of temples, you can do that. I've gone around destroying those growth increasing temples throughout my newly conquered greece because most of the land there is rioting!
I build mainly temples to Juno or Jupiter, as they give the biggest public order bonus, which is the most important thing for me. Besides these two, I only build temples to Vulcan in provinces that have mines to increase the income from mining. So, reassuming temples need to increase public order by law. There are other buildings where my people can party or relax![]()

Temples of Neptune and Mercury are especially useful in major trade cities.

Yeah because Pop. growth is already a little too fast, I usually use law or trade(mining to vulcan for mining cities).
Temple of vulcan is cool if you like high quality battle stuffs :3

Yeh, everybody builds the same temple (Jupiter, Juno, Mars, Vulcan) which I build.
The question remains, why keep the others?
If there were only 4 temples people would probably moan that there is too little temples. It's only up to players choice to build diferent temples, to diverse the cities' religion. Players choose the most reasonable buildings in my opinion, the ones that keep public order high, which is the base to high income![]()

I'm sure that in vanilla, there were some specific benefits to building a temple to a particular God in a particular city. There was a guide to vanilla called "Smackus Maximus" or something like that, that discussed the benefits. I think (it was a while ago so may well be wrong) there were benefits to Ceres in Mediolanum, Neptune in one of the Sicilian cities, that these benefits only applied if a temple to the god existed in that particular city.
I would guess that as RS is a rebuild, these changes didn't remain but it would be good to have something like that again, i.e Building a high level temple to Mercury in Patavium gains 10% trade income over any other city with a temple to Mercury, a high level temple to Ceres gives increased farm income etc. Some of the temples just don't get built otherwise as you gain nothing particular from building them.

I find the temples are good for areas. (my areas are generally in groups of three)
Growth, Military and Mining temples in military areas.
Trade, Health and Public order in Trade/outpost areas.
Mining, public order and military in mining areas that need troop garrison.
It works fine by me.
