... did not find an explaination of the effects. When a trebuchet slings a dead cow (carcas) into a town, what does it do? Affect enemy morale?

Yes it makes them flee easier, but i myself think it doesn't really work well, cause after shooting with cowsyour troops have to go to the enemy to fight him and also are affected of this moral damage so i think it looks nice, but does not really make anything

The reason that doesn't work is because thats not how your supposed to use them. That would be like laying down a mine field and then having your tanks fight the enemy tanks in the middle of it.
The whole point of the cows is to make the enemy troops rout without losing many casualties yourself. Once one cow falls near the enemy, the entire units' morale is crippled, so you stop firing cow and unleash your missiles on them. After taking some casualties your archers and catarpults, the enemy loses their morale and they flee, and they end up causing a mass rout and your infantry never had to do a thing
Yep, it just effects morale to who ever goes near it even your own troops too.
Hmmmmmm .... I wonder what happens if you throw dead cows at live Oliphants? Too bad you can't set them on fire. Flaming cows ... smells like a cook out!
Well I think that it is not worth using it at all...as they are only good at making enemies flee, but when you fight orcs that is easy enough anyway...(although I think the orcs would like the smell of dead cows
)
Cows work very well when defending.
