If I wanted to make peasants into pikemen, can I do it through text-editing only?
I tried giving the peasants Scots_Pike_Militia for the soldier type in the edu and the armour ug models, but it they are still peasants in battle. What else am I supposed to be editing?
EDIT: Resolved. Turns out I had to add in that io file thing in the preferences.

It's a very pesky job but fairly easy with a little patience my friend.
Firstly you can't make peasants unit into a pike unit by just EDU file. You need to edit the unit entirely which is a very lengthy procedure instead you can copy the scots_pike_militia contents and rename it peasants files and then edit your EDU file or simply go to
data\unit_models\battle_models.modeldb file there you find this

55 unit_models/_Units/EN_Peasant_Padded/peasants_lod1.mesh 900
55 unit_models/_Units/EN_Peasant_Padded/peasants_lod2.mesh 2500
55 unit_models/_Units/EN_Peasant_Padded/peasants_lod3.mesh 6400
then rename the contents under 8 peasants in this manner

now go to the EDU.txt file and edit the entire stats of peasants to this
