Religion switching is not an option. You can convert others to your religion but you cannot "switch" religions. The Jewish Synagogues are there to help you make merchants. You need a certain amount of Judaism in a settlement in order to create merchants, depending on the level of the market you have. This info is in the player handbook for more details.
Don't do what I did when I first messed around with Jewish syngogues and make one in every province. You will quickly have tons of religious unrest.

My mod skills are not that great yet.... I've tried making some maps... Changing the starting religions and religion % is fairly easy.... I'll post how to do it in this thread a little later... You have to change the EDB, EDU and the Faction Starting positions file has to be edited. ( I forgot exactly what the file is called) but I'll pull it up.

I'm Irish, I start killing everyone and all, but I'm sick of the Pope, I can't change my religion to Pagan or Judaism, right?

Apologies DOTS team, I am a little sceptical whether any of the stuff is possible however. That said i don't believe men landed on the moon.
