What is required to make star forts? I can make wooden forts but don't see any option to upgrade them.
(Not that forts are any use, but they look cool on the map and I have money to throw away).
Also, is there any way to tear down forts?

Moved to gameplay and strategy.
You build star forts through a construction tab when you click on the fort. However you can only upgrade it from an artillery fort and you need to have met the research pre-requisites first. Can't remember what they are exactly but I believe they are in the artillery stream

You may well require a general to be present at the same time - much as with the initial construction of the fort. That said I only started to really utilise forts last night. I'm learning by doing along with the rest of us.
You need to upgrade the wooden fort to an artillery fort which cost 4500 and then to the star fort which cost 6000.

Yes but my wooden fort doesn't have the upgrade option. I have a general inside. I am pretty advanced in the artillery line, I only need to discover 2 or 3 things and build the last building. Could some of these be the prerequisite?
BTW wooden forts seem to disappear (instantly!) the moment you move out.
That sounds odd, all the wooden forts I have build stays for good, but you don't need any technology to upgrade the fort just money.

The upgrading option won't appear if you don't have the money, however.
If you have built the fort inside your own territory you should get a construction option. If the fort is in enemy territory it can only be a wood fort untill you have captured that region.
... on a related note; I seem to be unable to ever put units in the "point" of the star (i.e. across the thing bridges).
Is it just me (i.e. I haven't persevered with clicking every millimetre of the area) or does anyone else have the same problem?

I believe the parts attached by bridges are called 'ravelins'. You can indeed put units up there. It's easiest before the battle, you may have to babysit the units a little bit when moving them accross that bridge though, especially if there are ropes present as your own troops like to climb up and down them.
For me, navigating ANY fort is a real pain. Units never use the path I expect them too. They never shoot from the positions I expect them too. I just feel like I'm not controlling much during siege.
I feel the same way. That is why I make it a point to destroy every fortifications in towns that I take over because I find I am more effective at defending a non fort siege by garrisoning and using arty effectively. With the way the strategic map bug is, I can never tell which side of the fort to try to defend and they never defend effectively on the walls. If I am forced to defend in a fort, I tend to do better defending in the courtyard and shooting them down as they come down the stairs.
That is so true, and what a shame. There's too many factors that are random, in order to deploy your units in a fort. I wanted to move my units off the fortifications and back into my base. They ended up taking using the enemy's siege equipment to ground level and then running through 2 enemy groups to the gate. I was kind of astounished how stupid that was.
I have no problem to get the soldiers out in the tip of the fort
