You can have more than one if you use a mod folder. Not all mods use mod folders so it depends on the mod. What part of getting mods do you not understand? I will try to help.
I think he is like me - he just has never heard anyone talking about where/how to download them, how to install them (if they need it... :S) and how to use them.

If you go to the Viking Invasion II forums (for example) you will see some vids I made that guide you through the simple install process - it is a process pretty much the same with all mods!
I'd recommend only using the green-folder-icon mods as the other types will mess with your original game files.

If you copy your Rome - Total War folder, you can have as many as you want as long as you're not wanting for HD space. Or just stick to the mod foldered ones.
If you check out the Hosted Modifications section, it lists all the mods. Go into the sub-forums and look for a thread labeled Download, or similar. Then, for most, just direct the installer to your "Rome - Total War" folder.

I currently have 7 mods, plus the original RTW, in one RTW folder. They are mod-foldered mods, so they don't overwrite each other, nor do they overwrite the original RTW.
To uninstall a mod-foldered mod, you uninstall it, that's it. It doesn't affect the other mods, or your original RTW.
A non-mod foldered mod (Res Bellica, Arthurian Mod including Raven Feeders, SPQR, and a few others) makes it so that your original RTW is overwritten with it. So not only you can't install other mods anymore, you can't even play your original RTW, except that one mod. To undo it, you'd have to uninstall your entire RTW folder, reinstall RTW.
This is why all mods should be mod-foldered.
This is a new user-friendly phenomeon. For games like Command and Conquer Generals, there is no mod-folder option. Each time you install a mod, your game is overwritten to become the mod. In order to play the original game, or to install another mod, you have to uninstall/erase everything, and reinstall the game.
Thank God though, that RTW is not like that, and there is the mod-folder option. User-friendly games like Mount and Blade, also Half Life Series, also have the mod-folder option, allowing you to have multiple mods at the same time without overwriting each other, or the original game.

Iberia Total War version 1.2 (version 1.5 or Gold Edition is terrible, but I couldn't find v1.2 anymore)
