Does anyone know if fieldworks (such as earthworks) can be made possible to be used in custom battles? Only the boring stakes for the light inf seem to be possible...

I'd suggest doing a search before you post.
I've used the bastions for artillery in the campaign - there should be no reason for these to not be available for custom battles.
