have a general walk out of a city and click the 'build fort' button

you have to have a general in the army and the build fort button is located on the right side of the army details panel, immediately left of the objectives button. it's the one in the middle

I think anything beyond the artillery fort is pretty useless - just too large to defend!
Star forts can be defended, just fill them completely with mostly line infantry and 2-3 mortars, and 2-3 skirmishers (whatever youve got with a lot of range)
Dont bother with cav of any sort, except potentially your general.
I'd say, ideally:
4 Skirmishers (put them on the jutting-out sections of the fort and pull them back across the bridge if the enemy assaults it. After that I put them in the buildings and they do a good job picking off the enemy as they fight on the walls)
3 Mortars (to attack the enemy from inside the walls)
12 Line Infantry (3 per side of fort, redeploy to match the enemy, but make sure they are equally distributed to start)
* I actually deploy them first inside the fort where I use their trenches and stakes to build secondary fortifications next to the buildings, then move them out to the walls
1 General
i built a fort, fully upgraded with full stack inside. the fort covered a tabacco exploitation and my city. first, 2 cherokee units try to attack tobacco's exploitation so i intercepted them and destroyed them. next turn, a full stack tried the same and guess what? they took my tobacco and sieged my city without i get a chance to intercept them! furthermore, they were in the red intercepting zone!
i don't understand at all please help
hmm i think if then two armys are equally strong or the attacking stronger, they can move up to the walls without you being able to intercept. at least that happens when i attack with stronger armys....
