Default Dagnamit! I got beat again.

Everything was going great guns until the Plague struck and everyone turned on me except the Maygars.
From every direction I was being attacked and one by one my great empire lost settlement after settlement, I got 70K in Debt and had no money to restock my lost troops and just gave up once I had to start giving settlements to appease invaders.. Only for them to betray me a turn later.

I was playing Medium Campaign Difficulty as well.
    Way too hard.

Once you get a little more experienced it becomes easier, if you can anticipate the dark ages you'll do better. Also, it helps to keep some strong armies on your major borders in forts, especially cavalry, because it provides the AI incentive not to attack you.

The dark ages were a time of almost continuous raid and counter-raid by most nations, though not all were sanctioned by the government. The gov't simply didn't have the power to control their own subjects in the border areas, and many soldiers who were unemployed created general unrest. I do agree that massive national armies converging on you from all sides is a little unrealistic, but it's hard to do much more with the current engine.

True wisdom is less presuming than folly. The wise man doubteth often, and changeth his mind; the fool is obstinate, and doubteth not; he knoweth all things but his own ignorance. --- Pharaoh Akhenaten,

I had the largest Army in the Game but as the HRE I was literally fighting everyone except the Pope.
I had no money to do rebuild my army; They were strong, but continuous pounding of my Armies took it's toll, I was losing money and my Army was reducing in size until my main borders were protected by battered and bruised spears that just fell apart after one too many spawning armies.
I pulled every diplomatic trick I could to eventually appeasing my enemies.

The Plague triggered utter Chaos, I can't guard North, South, West, East all at the same time despite my Army being the biggest, I was drained Economically and Militarily. I prayed for Vassalage, simply to buy me some time.

I certainly felt like that Knight with the Chip on his shoulder, that Plague hitting me was like that White Rabbit, I was literally giving it the "JESUS CHRIST!!!!" reaction like King Arthur there when every Faction stabbed me in the back 1 by 1.

And it was MEDIUM Difficulty!!! I'd do Easy but I do have SOME Pride left after my last hammering.

That sounds like one hell of a campaign It reminds me of my HRR-hellride to. Milan hordning up south west, France taking the capital and Vienna to Venice.
If you wanne avoid this, you should rush them early on, as fast at you can. Sweep throue Italy, just to give you a wall on your back.

No no no, you should play vh/vh, no matter what. Just decline one of the popups instead.
Thorolf was thus armed. Then Thorolf became so furious that he cast his shield on his back, and, grasping his halberd with both hands, bounded forward dealing cut and thrust on either side. Men sprang away from him both ways, but he slew many. Thus he cleared the way forward to earl Hring's standard, and then nothing could stop him. He slew the man who bore the earl's standard, and cut down the standard-pole. After that he lunged with his halberd at the earl's breast, driving it right through mail and body, so that it came out at the shoulders; and he lifted him up on the halberd over his head, and planted the butt-end in the ground. There on the weapon the earl breathed out his life in sight of all, both friends and foes. [...] 53, Egil's Saga
I must tell you here of some amusing tricks the Comte d'Eu played on us. I had made a sort of house for myself in which my knights and I used to eat, sitting so as to get the light from the door, which, as it happened, faced the Comte d'Eu's quarters. The count, who was a very ingenious fellow, had rigged up a miniature ballistic machine with which he could throw stones into my tent. He would watch us as we were having our meal, adjust his machine to suit the length of our table, and then let fly at us, breaking our pots and glasses.

Aren't you meant to fear and plan for the dark ages?

I really like them, campaigns get really exciting when everyone suddenly turns on me

Plus I know that if my relations are good they'll probably accept an alliance again soon enough

Oh and I think it's best to play on VH/VH, I believe DLV is designed for it.

I luuuuuuve the dark ages. It's the only time my kingdome is truly damaged. Last campaign I played, I lost half my settlements. There HAS to be risks against your kingdome, or else I could just go play Vanilla.

There should be 1 major dark age(like it is now), and several mini random dark ages, where the rebel spawn all ower the kingdome, blocking every road. (But again, fighting the same gray defenciv local enemy gets boring after a while, thats why it has to be enemy factions involved.)

First few times I encountered the Dark Ages my empires got ripped apart as if they were a wet paper bag. You have to learn though to plan for them, take a decade prior to and solidify your economy and fill garrisons. It's actually a lot of fun once you know it's coming and are readily prepared, it brings that chaos and total war feel to a total war game.

And if you plan it right now only will you come out without a scar or bruise, but you can actually grab a couple of provinces without much hassle and in the end, your empire will be even stronger then before.

Dark Ages will be covered in the guide soon... Until then there are some great tips by Furin in the 'Tips' thread.
