Patch your game to 1.2, then navigate to the Medieval II Total War/tools/unpacker folder and double-click unpack_all.bat. When that is done, go to your Medieval II Total War folder and open up the medieval2.preference.cfg file. Add this to the end:

Then save the file and make it read-only. Now go the Medieval II Total War/data/text folder. Download alpaca's .strings.bin converter from here. Follow the instructions there. To edit faction names and descriptions, you want the expanded.txt and campaign_descriptions.txt files. To edit unit names and descriptions, you need the export_units.txt file.
