You can test out the question by introducing them to the world earlier by configuring the events_list. From what I remember, it's actually completely random. Some instances, as Theseus1234 said, they'll go for areas around Russia or Turkey.
I've actually seen them go as far as Poland without provoking the Russians before settling down.
It varies from game to game. Usually they will go into the Middle-East but sometimes they go into Russia or just keep moving West.
No they won't go towards your faction's nearest settlement (what happens if you're English?).
They will randomly attack generally the southern Russian settlements, or the regions in the Middle East. The only factions I've seen come under attack from Mongol invasion are (in order of likelyhood) Turkey, Russia, Egypt, Byzantines, Poland. They will quite often go straight towards the Holy Land, so the Crusaders should watch out.

They head either to Antioch or to Kiev. The Mongols will attack and sack some cities on their way to either places.
In my current campaign they headed to Antioch until they spotted my army in Acre and attacked Acre instead of Antioch. After some bloody defeats they retreated and made Jerusalem their capital. After they lost that city, all what is left for them is to defend Jedda.

Alphonse has it correct -- they are coded to head to those two places. On the way they seem to like to scare the **** out of sttlements to turn rebel. It seems more a path of rebellion unless the human player intervenes. This rebellion process seems tol preserve the Mongol strength upon settling into a new home.

Indeed , it confirms what i experience currently , i'm playing as Novgorod People at the moment , with stainless steel mod 4.1 , Mongols arrived and turned the whole Caucasian region into rebel settlements , and they are now heading toward Kiev (capital of my allies Kievan Rus faction) with 11 full stacks !! ( lol , i'm almost wetting my pant at the moment ) .
Still , I'm waiting for them with my Dvor archers and dismounted Boyar Sons in my fortresses of Smolensk and Moscow , 2 full stack armies , maybe i should sacrifice a third army and put it on a bridge to gain some time to reinforce my cities in case![]()
Theres nothing quite like that first sighting of the Timmy horde.....Bah, I'm going to make at least one army march out to fight them, for better or for worse. If it's too easy then it's no fun.

E:TW's natives have developed a new "Ballistic Automatic Detection And Seeking System" to utterly annihilate any European that sets foot on their soil... That's BADASS for short!
After they find a home, they start to spread out and are far, far easier to defeat. In their Horde mode they usually travel in a 9-patch formation so that it is nearly impossible to outright defeat them in a field battle because they have so many good reinforcements. If you can get them to string out in a file so you can attack an army on the end then you have a chance of attacking and defeating both armies because they'll have only 2 armies and you can have 2 or 3. The problem comes when the less-than-half-witted AI "helps" to maneuver your troops. Sometimes it does good and sometimes not. I like to taunt them into attempting to cross a bridge or to cross a ford and get stuck up against a fort that is well defended. They almost always withdraw, however.
They make a bee-line for either Antioch or Kiev - depending on which territory they appear in. If you're anywhere near either of these two settlements, you can expect to be their next target.
