When an enemy lays siege to my settlement or castle they drop their siege equipment and run away forcing me to come out and attack them (thus its no longer a seige...) Is there a hotfix for this?

Yeah I thought that was if you attacked the army that was sieging the castle or town? Just so you know I'm no expert!
Its because they always expect you to go to them when you initiate the attack. Same as they start walking towards you whenever they initiate the attack. Just wait for them to attack your city if its already under siege.
Note: Which is why having long ranged artillery able to go under the gate with a few archers to attack them is always good, but remember to get the cavalry ready to flank them with the melee units right behind the ranged.
You could also do what i do, send archers behind them.

It's because you are sallying out. In reality, a field battle is tactically much better for the attacker, than a siege. You have so towers to worry about, no archers on the wall, or no oil spilling out the gates.
Wait for the enemy to attack you during a siege instead of sallying forth, that way as the defender you will get the upper hand.
defence almost always has the upper hand right?
If you attack them while you're in the castle they WONT try to breach your walls. They just drop their siege equipment and wait for you. Either wait for a draw or go out and fight.
In all of my battles i initiate the attack whenever i'm under siege they wont try to breach my walls, EVER. I assume it has something to do with the AI.
What I like to do is charge out & trash all their seige equipment.
