As long as I've been playing this game I've always had a problem getting Chivalry, is there some simple easy way to get it? I seem to get dread on almost ever General/Family Member I obtain.

The best way I've been able to find is to park the leader in a city on low tax. This tends to grow my chivalry the fastest and most reliably.
Other ways that will gain chivalry:
Join a Crusade (that ends in victory)
Release a large amount of prisoners (but I don't know the requirement)
Occupy cities instead of sacking/exterminating them

I think you can also get chivalry by ending battles when you first get the victory, rather than continuing and hunting down the fleeing enemy to capture them.
try to limit usage of assasins ( and perhaps spies )
Any society that would give up a little liberty to gain a little security will deserve neither and lose both.

-Have "low" taxes when the general is governing a settlement.
-End battle as soon as the option is given.
-Do not use spies or assassins (This only affects the faction leader though.)
-Fight battles with the odds in the enemy's favour.
-Participate in crusades and jihads.
-Release prisoners, (Ransom is neutral and does not give Chivalry or Dread, so it can be used to stay on the safe side.)
-Occupy settlements, sacking is OK with big price settlements, but never exterminate.
As for the Paladin, the battle with the Dragon isn't the danger, it's the battle in the heart that he must be wary of.
With respect to gaining chivalry, I recently stumbled upon an "exploit" that will give it to you very quickly. I'm not condoning this, but will share it with those who are interested. Read the spoiler at your own risk....

Pretty sure the effects of characteristics like dread/chivalry/piety are hardcoded. You could though I guess mod the traits that give dread to include a growth component, but it would also give the boost to the dread of non-orthodox factions too. Perhaps a simpler way would be to give non-catholic factions another way of gaining chivalry via traits? :hmmm:
Having your governors build churches, better said, major religious buildings also adds to his chivalry.

Building it, having your governor present during the whole duration of it's building time, to the end. I've noticed that I generaly I get chivalry after building churches, but there is some percentual chance - the bigger the church, the bigger the chance.
Not just catherdrals, start from small churches, for me it's a sure way of getting the trait fair in rule - which increases over time. And be sure to keep your taxes low as well.

Be sure if you'd like, but when I discovered it, to my shock, I tested on 3 generals with identical results (and loaded from a previous save immediately after). So, I'm sure that it does.
I don't use some of the installation add-on options (e.g real recruitment) so maybe this works differently with some of those installed....
Another good way to build chivalry is using a single general and nothing else to clear your regions of Rebels. Only the small groups of 2-4 units though obviously or you risk losing the general.
Just charge , withdraw , charge untill they are all dead. The bonus of this is not only do u get Chilvary but you also get a 3 gold chevron general and tons of +1 and +2 hp traits.
I had a general pretty much turn into a god doing this , he had 6hp.

what is ment by not using spies? Does chivalry decrease only by using them for enemy towns and armys or even when they are just used to clear the shadows?
