You could setup a new culture, a simple copy of the Greek, then map the portraits to the Egyptian culture (in descr_culture), and change the cultural assignment in descr_sm_factions to the new one for the Seleucids.

The only way to do it is as Master of None says to create a new culture group for just the Seluecids: http://www.twcenter.net/forums/showthread.php?t=34622
But, if you don't care if all the factions within that culture share the same portraits you can just replace the portraits from the greek culture with those from the egyptian culture. There are many folders of portraits you'll find in data/UI/egyptian/portraits...

The culture is changed in descr_sm_factions.txt.
The edits are not exactly 'a few'. You'd probably have to edit recruitment/availability in EDB, availability in EDU, conditions in EDCT/EDA and so on, and you'd still end up with seleucids using sounds/UI/battlemap models/strat-map models from the egyptian culture.
I suggest you follow MoN's advice and set up a new culture for them, which you can then modify at will. Here is a step by step guide on that.
