Offensive Tactics

Personally, I'm a defensive fighter, thats why fighting the muslims is such a pain because they prefer me to attack them. Most of the time, they retreat to some hill and reform so I would begin my assault. That isn't my style of fighting, because I rely on a Longbowmen barrage to weaken the enemy, then ride my cavalry around and rout them to hell. My question is, what are your favorite offensive tactics, as well as formations.
Keep in mind ways how to counter fatigue in the desert.
