Keep your units TIGHT
This is pretty random but, I've been playing Medieval 2 total war for a while and just recently realized how important unit formations are, when they get even the slightest bit loose and engage with a more concentrated force.
simply the ones packed together can gang-up on the looser troops and just wreck them.
