Byzantine Questions

I have around 31 territories right now as the Byzantine Empire. I have the entire Mid East and all of Sicily's cities as well as Rome. It is currently turn 98 and the Mongols have their huge armies roaming around. They've looted Tiblsi(s/p) and Yerevan although I have just taken Yerevan back. I have three stacks of my best troops trying to kill them and have 2 stacks in Europe(I'm hoping to get 2 more). So now for my questions:
-How many stacks do the Mongels get? I've killed 2 and 4 of their leaders but they just got 5 more stacks.
-What's so good about Kataphractoi? I've just unlocked them and their stats aren't anything special.
I had one more question but I forgot it now. I'll ask it when I remember.

So their only good in melee with other cavalry?

I forget, are they still completely covered in steel? Well if they are, it means their charge owns up anything. If not, they probably still do own but are just an equivalent to Frances Gendarmes or whatever their special unit is.

Definitely not, not in the vanilla version at least. The Byzantines never used full plate historically, so they couldn't be available at the game. I know the game is not that "historical" when you think about it, but the developers wouldn't make such massive mistakes, that's for sure.
