If you find Vanilla too easy

Try LTC and play the Sicilians on VH/VH. Boy did I get a shock. It is over 50 turns and I still can't recruit Norman knights on or off horsies. (I do have Hospitalers now.) And, I have been attacked by 5 factions - Byzantines, Venice, Moors, Milan, and Hungary. (Well, actually, I attacked Byz and Moors, but they deserved it.) Also, the AI has huge dreadful armies. It even builds forts! And does so in clever places. (Forts cost 2000 fl.!) This is the toughest game I've had since playing the Teutonic Knights in Kingdoms.

Also, besides the LTC you should try Stainless Steel and Broken Crescents mods. They are the best.

Submods for stainless steel.

Real Recruitment and Byg's Grim Reality 3, not sure what bgr does but RR makes it so that you need to have your king/prince in a settlement to recruit units better than militia I think.

Byg's mod is the one that makes you need a war council general/king or heir to recruit good units. RR makes it so that unit pools are reduced, especially pools of elite units, so that armies will be more balanced (i.e. no all knight armies). And RR also makes it so that heavily armored units won't be available until the appropriate time period when the armor was developed.

I'm using the AI from LTC and it sure does make it more difficult as the enemy develops better and builds better armies. They just don't attack me, though. I guess they realize they would lose. They do build forts, yes, but then I attacked Spain at Leon and Toledo and the guys didn't ever came out of the fort. The king alone in his castle fighting a half stack army and his soldiers on the fort having a good time. Maybe I need to install the whole mod and not only the AI...
Credits go for a more sensible diplomacy and the AI trying to flank you on battles. It even managed to surround my prince once... too bad he's a tough guy.

Stainless Steel is lots of fun, but the RR and BGR submods wasn't for me, didn't like the fact you needed to have the war council member of your faction in the castle you want to recruit knights and such at, I didn't know the effects of RR and BGR when I first installed SS so I thought something was wrong with my game when I could only recruit spear/archer militia.

Lands to Conquer plays faster than SS, but it is still quite slower than Vanilla. It uses the normal map and factions and I don't think it has changed the unit stats nearly as much. Pikemen are quite effective in LTC. I think the size of the mod is miniscule compared to SS.

It just makes the game more realistic and much more tough.
Some people don't like it, so they uninstall those two from the SS. Depends on you and what you like
