For me it is:

Turkey
Russia
Byzantines (o.O)
and Spain

The only faction I've never seriously played with is the Moors.

Well, let me see. There has been more then a few.
I never played: Hungary, Poland, Milan, Venice, and Papal States.
I will never play Milan and Venice. I can't stand those lying cheating backstabbing bankers .

You should definitely try Egyptians and Spanish, one of the most memorable campaigns ever for me.

I never play as the larger nations, I don't feel accomplished if I can't start small and get then get bigger.

Hmmm:hmmm:Let`s see...In vanilla I never played as Poland, Hungary or Scotland ( it`s just too surrealistic to imagine Scots conquering entire world).And I never finished Portugal and Spain campaign.

Never played as the Turks. Hate that whole region and it's mountains, gah! makes moving arouns such a pain in the neck

I have only played England, Moors, Turks, France and Poland.
I liked Turks very much because it suits my style of playing, that is using lots of cavalry archers doing cantabarian circle. England was quite easy and thus boring. Moors also not good. Right now I am playing as Poland and its fun.

I think I played every faction except for the Islamic nations, excluding Egypt (Which was a blast). I enjoy being surrounded by many different nations like the Italian Peninsula, Byzantium, and Northern Europe. All that action, quick decisions, and unexpected twists. Oh I never played Scotland come to think of it.

I agree with the assessment of Egypt. Truly, one of the most enjoyable factions.

Never played much as france although i am now as Guillemount De Lyon's name is just awesome
