As time goes on, the technology advances and you are able to get new armour and weaponry. But sometimes in certain provinces, I am left behind having equipment from years ago!! How can you update the armies?

Blacksmiths, stables, barracks, siege works, etc. Not upgradeable in all towns, when the city/castle reaches a certain population I think you can upgrade the walls on the city which allows more buildings, or the level of the castle, which does the same. Not sure tho.
You can upgrade units armour and weapons. To upgrade armour build armourer buildings. And to upgrade melee weapons you should have swordsmiths guild in one of your settlements. You can increase your chances of getting that guild if you train a lot of infantry in one particular settlement. Gunpowder units can upgrade their weaponry in cities with alchemist guild. Better units can be recruited in better/upgraded barracks/marksman ranges/stables etc.How can you update the armies?

do you mean updating armies as in upgrading from spear militia to armored sergeants? because thats not possible at all. you would have to train armored sergeants and then disband the old spear militia
