If you want a challenging faction, the Templars are about as challenging as it gets. Though looking at your list, you haven't played an Italian or Ibeian faction yet, so you may find Aragon, Genoa or Sicily interesting.

I don't use RR or any other submods so I can't comment on them too much, but without them the Templars were probably my hardest start (though it was made a lot easier with a Hospitaller Guild in Antioch).

Lithuania have a tough start and good units later on.

Sounds interesting, which factions are hard to play in the late era?

In the late era Lithuania is always a challenge . I haven't tried it yet but I'd assume starting as Kwarzem in the late era with bloodthirsty mongols breathing down your neck with full stacks in your lands isn't very easy either .

    Poland!

infantry aint all that but you got some awesome cavalry and the starting position is interesting with many different options for expansion.

sounds good, but lately I don't wan't to play catholic nations since I'm sick of the pope being an &%$§&#%, so I rather play orthodox , pagan or muslim nations

If you don't want to play Catholic play Lithuania. Its a very enjoyable campaign whatever you do. That and their unit roster is one of my favourites.

Like everyone said, Lithuania. Denmark is good too but it's similar to Norway. Try Portugal/Aragon too, they're pretty interesting.
