The reason we think we know what is going to happen to the Sun is because we have a lot of other stars in all stages of their lives to look at (millions!) and because we have developed a theory of Stellar Nucleosynthesis that explains how stars develop.
When stars are plotted on a graph of colour against luminosity (the Hertzsprung-Russell diagram), the majority of stars form a thick band on the diagram that we call the Main Sequence, the Sun is one of these.
According to the theory, all stars on the main sequence are still fusing hydrogen at their core. The difference in their mass determining where on the main sequence they appear (i.e. how bright and what colour).
When the Sun runs out of hydrogen at the core 5.5 Billion years from now, the core will collapse due to gravity, but a shell around the core will become dense enough to start fusing hydrogen itself, causing the outer layers to be pushed out increasing the visible diameter of the Sun to around 2AU, which is ironically exactly the size of the Earth's orbit.
So in conclusion it will get very hot before it gets cold!
