In alot of games you can set a custom Screen Resolution regardless of its presence in the Options menu.

Medieval II's lowest is 1024X768

I know for a fact mine would run better in 640X480 or even 800X600

Anybody know of a way, either by modding it, or entering additional lines into the target box on the shortcut?
