Hey I play SS 6.1 with SSTC, Byg grim 3 and RR and some other mods but those dont matter for my question which is, am I still supposed to put the difficulty on VH/VH or wont I cripple the AI by not to?

You can put the difficulty on whatever you wish. You won't cripple the AI.
Stick in VH & give it ago. As a vetern of MTW I find that SS on VH brings the game upto that difficulty level. Makes the game a real challenge seeing your carefully lined up spearman collapse rather than just the AI's all the time....

Well CA always claimed, that difficulty levels in M2TW does not change any in-game stats. I also thought, that at least morale does change, but I really cannot prove that one.
On the other hand, what does change is campaign AI and campaign script. AI gets more money, it's attacking thresholds are lower and in SS it has also higher purse and free spawned armies at turn 10 and when the capital is threatened. Some of these though are applied at any difficulty level in SS.
So the answer is whatever you wish. I am almost sure, that only thing what changes with vanilla difficulty settings is AI's relations towards player. Many mods add to it also some cheats for AI as money script or those free armies to be spawned at higher difficulties.
setting combat difficulty to anything higher than medium won't give combat bonuses to the AI during battle? (minus morale)
this is the case in RTW and as a result a fight between two equal units in equal conditions gave away to lopsided results.
