About the second question. France is a perfect choice for what you desire. However, you might want to try HRE as well. I find them to have excellent heavy cavalry and excellent infantry. My combination of Burgher Pikemen/Pike Militia supported by the mighty Zweihanders and the brutal Teutonic Knights on the flanks proved to be a deadly force.

I second Rus, although I think France and Germany are very nice too. Go for Rus if you want excellent gunpowder units.

Nothing happens if you run out of turns. It asks you if you want to quit or continue and you can keep on playing till your hearts content.
