I accidentally hit escape when the choice came up, thinking i would save but instead it just closed the window and my last save game was 25 turns before. Is there anyway I can get the chance to do so again? I think I would like to try converting.

Yeah, that's what I was thinking. As long as you haven't progressed from that turn or played more than one turn on another campaign, the Autosave should still contain your chance. If not, I'm sorry for your error.
